HOW I MADE IT?

I wanted something warm and comforting, but still light and made from simple whole foods. The tomatoes create their own lovely flavor as they cook, and with a little water they turn into a naturally sweet-and-sour broth for the salmon.

01 – 01 – MARINATED SALMON

Herby, peppery and full of flavor.

I marinated the salmon with Italian mixed herbs, black pepper, a little sea salt and cumin powder. I kept the seasoning simple so the flavor of the salmon would still come through once it was cooked with the vegetables.

02 – TOMATO, ONION & CAPSICUM STEW

Juicy, naturally sweet and slightly tangy.

I added fresh tomatoes, onions and capsicums to the pot with a little water, then cooked them together until they softened and released their natural juices. As the tomatoes cooked down, the broth developed a lovely sweet-and-sour flavor without needing a heavy sauce.

I then steamed the marinated salmon together with the vegetables, allowing the salmon and seasonings to flavor the tomato broth as everything cooked.

03 – CORN, EGG & FRESH LETTUCE

Simple sides to complete the meal.

I steamed the corn until tender and naturally sweet, and served it with a hard-boiled egg and plenty of fresh green lettuce. I like having the cool, crisp lettuce alongside the warm tomato stew – it gives the whole meal a nice contrast.

WHY I LOVE THIS KIND OF MEAL

Warm comfort food that still feels fresh and light.

I love meals like this because they show that whole-food cooking doesn’t have to mean eating everything plain or dry. The salmon is juicy, the tomatoes and onions create a flavorful broth, and the capsicums add their own natural sweetness.

The tomato stew is probably my favorite part. I only add some water and let the vegetables and salmon do most of the work. As the tomatoes soften, their natural sweetness and tanginess come into the broth, while the herbs and cumin from the salmon add another layer of flavor.

Paired with sweet corn, egg and fresh lettuce, it becomes the kind of meal I genuinely enjoy eating at home – colorful, satisfying, comforting and made with everyday ingredients.

A LITTLE REMINDER

Whole-food meals can still be warm, juicy and full of flavor.

Eating simply doesn’t mean everything has to be boiled and bland. Tomatoes, onions, herbs and spices can turn a few everyday ingredients into something comforting and delicious. Sometimes a pot of warm tomato stew, a piece of salmon and a few simple sides are more than enough.
